Annies Salsa


8 cups tomatoes, peeled, chopped and drained
2 1/2 cups chopped onion
1 1/2 cups chopped green pepper
3 – 5 chopped jalapenos
6 cloves minced garlic
2 tsp cumin
2 tsp pepper
1/8 cup canning salt
¼ cup chopped fresh cilantro
1/3 cup sugar
1 cup vinegar (for BWB or 1/3 cup vinegar for PC)
16 oz. tomato sauce
16 oz tomato paste

Mix all ingredients, bring to a boil, boil 10 minutes.

Pour into hot jars, process at 10 lbs of pressure for 30 minutes for pints. Or WB 15 minutes.

Makes 6 pints

if you don’t like sweet salsa omit the sugar
I preferred to use lemon juice rather then vinegar

3-5 jalapenos is a medium hot salsa.

This simple salsa recipe is full of flavor and not hot, not even warm!

a simple recipe…

1 bunch fresh cilantro, chopped
6-8 diced tomatoes
1 bunch green onions sliced thin
1/4 ts. sugar
1/2 ts. salt

optional diced chili’s – this will make it hot! for less hot, remove seeds

This salsa is perfect for chips but, serve as a side dish, put on a salad or baked potatoes. I like it in pita bread with hummus.

Recipe: Salsa or what to do with all those hot peppers you are

5 green (long) chilies
4 Jalapeno
2 yellow chilies

Cut in pieces, leaving seeds in makes it very hot, you can leave in
some seeds or no seeds, depending on how hot you want it to be.
Place in a blender or food processor, add olive oil and blend to form
a smooth paste.

Add to chilies
3 cloves of garlic
Salt and pepper to taste

Blend once again

Add 1 bunch cilantro, cut stems off to leaves and blend

Add ‘Club’ crackers (similar to saltines more flakey but saltines will
work) to constancy, if it is to thick add more olive oil to thin add
more crackers.

Serve with bread or on boiled red potatoes or with meat.

Salsa and Green Onions

Here is a simple recipe to help use up not only the hot peppers but
the green onions you have growing in abundance.

20 yellow chili – ½ with the seeds cleaned out
10 Jalapeno – ½ seeds cleaned out
2 cloves of garlic
Salt and pepper to taste
Olive oil

Blend chilies, garlic, salt and pepper and olive oil

4 bunches of green onions cut-sliced

Add blended chilies and garlic to onions

2 lemons squeezed over the chili and onions

This makes a nice little salad, or used with any meat.
